Banana Bread
This recipe uses Midtown Mix Cake Base One, be sure to check out other recipes that use this base as well!
You provide:
Supplies & Equipment:
Standard Bread loaf pan or 3 mini loaf pans
Mixing Bowl and Whisk
Ingredients:
3 large overripe bananas (even better, frozen and thawed bananas)
2 eggs
2 tbs oil or melted butter
2 tbs lemon juice
1.5 tsp vanilla extract
Preparation:
Preheat oven to 350°F with rack in middle. Spray loaf pan with oil.
Step 1:
Mix wet ingredients. If using frozen bananas you can quickly thaw them in microwave. Mash bananas into the liquid mixture.
Step 2:
Add Midtown Mix Cake Base One in 2 batches, stirring to combine between batches.
Step 3:
Pour batter into pan/s and bake for 30 minutes for mini loafs (makes 3) and 45-50 minutes for full size loaf until toothpick comes out clean, rotating pans after 15 minutes. Let cool enough to handle, use a knife to loosen edges and let cool on a wire rack.
Tips and Ideas:
Frozen bananas work even better as they seem to have a more concentrated flavor - toss your peeled overripe bananas into a freezer bag whenever they get too old on your counter. Once you have at least 3, it’s time to make banana bread!
