Banana Bread

Banana Bread

This recipe uses Midtown Mix Cake Base One, be sure to check out other recipes that use this base as well!

You provide:

Supplies & Equipment:

  • Standard Bread loaf pan or 3 mini loaf pans

  • Mixing Bowl and Whisk

Ingredients:

  • 1 lb peeled, overripe banana (3-4 large bananas) - even better, frozen and thawed bananas

  • 3 eggs

  • 3/4 cup oil or melted butter (1 1/2 sticks)

  • 2 tsp cinnamon (optional)

  • 1.5 tsp vanilla extract

Preparation:

Preheat oven to 350°F with rack in middle. Spray loaf pan with oil or rub with butter.

Step 1:

Mix wet ingredients. If using frozen bananas you can quickly thaw them in microwave. Mash bananas into the liquid mixture.

Step 2:

Add Midtown Mix Cake Base One and mix until thoroughly combined.

Step 3:

Pour batter into pan/s and bake for 30 minutes for mini loafs (makes 3) and 50-55 minutes for full size loaf until center of cake is firm, rotating pans halfway through. Let cool enough to handle, use a knife to loosen edges and let cool on a wire rack.

Tips and Ideas:

Frozen bananas work even better as they seem to have a more concentrated flavor - toss your peeled overripe bananas into a freezer bag whenever they get too old on your counter. Once you have at least 3, it’s time to make banana bread!
