Chocolate Layer Cake

This recipe uses Midtown Mix Chocolate Cake Base, be sure to check out other recipes that use this base as well!

You provide:

Supplies & Equipment:

  • Two 8 or 9” cake pans

  • Bowl and whisk, microwave

Ingredients:

  • 6oz semi-sweet chocolate chips (if eating dairy free, try dark chocolate or other vegan chocolate chips)

  • 1 cup neutral oil (one of the few times we don’t recommend olive - try canola, vegetable or avocado)

  • 4 eggs

  • 1 cup milk (dairy or dairy free)

  • 2 teaspoons vanilla extract

Preparation:

Preheat oven to 350°F, cut parchment paper to fit into cake pan

Step 1:

Add chocolate chips to oil in microwave safe bowl/ measuring cup and microwave at 30 second increments, stirring each time until chocolate is completely melted. Set aside

Step 2:

Whisk eggs and vanilla together, then add Midtown Mix Chocolate Cake Mix and stir until combined

Step 3:

Pour in melted chocolate mixture and milk and mix until combined.

Step 4:

Divide batter between two cake pans and bake at 350°F for 30-32 minutes until center of cake is set. Let cakes cool on wire rack before sliding a knife along the edges of the pan and turning out onto rack to cool. Frost as desired once cooled

Tips and Ideas:

Try a classic cream cheese frosting or a chocolate or coffee frosting.

This cake makes an excellent base for a birthday cake.
