Coffee Cake with Spiced Crumble

This recipe uses Midtown Mix Cake Base One, be sure to check out other recipes that use this base as well!

You provide:

Supplies & Equipment:

  • 8” x 8” pan for sheet cake or similarly sized dish, could be a round pan or pie dish

  • Parchment paper (not wax!) cut into the shape of your baking dish. While not essential, this will make clean up and presentation much nicer

  • Mixing bowls and whisk

Ingredients:

Cake:

  • 1/2 cup butter, melted and cooled

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1/2 cup sour cream or greek yogurt

  • 2 tablespoons milk

    Cinnamon Crumb:

  • 2/3 cup brown sugar (dark or light)

  • 2 1/2 teaspoons ground cinnamon (or any baking spice mix)

  • 6 tablespoons unsalted butter, cold and cut into pieces

Preparation:

Preheat oven to 350°F with rack in middle. Cut parchment paper to overhand the sides of the dish so the cake can be lifted out of the pan once it’s baked.

Step 1:

To make up spiced crumb, remove about 1/3 cup of Midtown Mix Cake Base One from jar and mix with sugar and spices. Use a fork or clean hands to combine the cold, cubed butter until the largest pieces are about pea sized. Set aside

Step 2:

Combine melted butter, eggs, vanilla, sour cream and milk in a large mixing bowl and add remaining Midtown Mix Cake Base One until combined.

Step 3:

Pour half the batter into prepared baking dish, sprinkle half the cinnamon crumb mix on top, then add remaining cake batter and top with remaining cinnamon crumb mix.

Step 4:

Bake at 350’ for 40 minutes until a knife or toothpick come out clean. Let cake cool for at least 15 minutes before pulling out of pan

Tips and Ideas:

Use plain cinnamon or a mix of warm spices such as ginger, allspice, cloves and nutmeg.

Create a simple icing with milk, powdered sugar and vanilla to drizzle for an extra special touch

Enjoy with coffee and tea, makes a great host gift
