Focaccia

This recipe uses one half of a package of Midtown Mix Pizza Dough Base, be sure to check out other recipes that use this base as well!

You provide:

Supplies & Equipment:

  • Electric mixer, preferably a stand mixer with dough paddle attachment (not bread hook)

  • 8” x 8” Baking dish

  • Parchment paper

  • Oil spray or brush

Ingredients:

  • 1 1/3 cups warm water - about 100°F. This is warm (not hot) tap water, or a cosy bath temp

  • 1 tablespoon sugar

  • 5 tablespoons olive oil, including 1 for greasing pan and 1 for topping bread

  • 1 egg, room temperature

  • 1 teaspoon of herb mixture of your choice and 1/4 teaspoon of salt, ideas include:

    • Rosemary

    • Mix of granulated garlic and onion

    • Oregano, basil, parsley

Preparation:

Do NOT preheat the oven for this recipe

Grease baking dish with 1 tablespoon oil

Step 1:

Mix together water, 3 tablespoons of olive oil and egg in a medium bowl

Step 2:

Add HALF of pizza dough mix to bowl of stand mixer and turn on slow speed. Add sugar and pour in liquid ingredients. Increase speed to medium speed and beat for 5 minutes.

Step 3:

Turn oven on to 475°F. With wet hands, transfer dough into prepared pan and press into corners. Cover with clean cloth and place in warm area to let rise for 45 minutes.

Step 4:

Once focaccia has risen, sprinkle with herb mixture of your choice. Turn oven temperature to 350°F and move bread into oven to bake for 60-70 minutes - keep door closed for duration of baking.

Step 5:

Drizzle top of focaccia with 1 tablespoon of oil and let cool for 10 minutes before lifting bread out of pan and leaving to cool on wire rack for an hour.

Tips and Ideas:

Focaccia can be stored at room temperature in an air tight container for a few days or frozen for up to a month.
