Tools and Ingredients:
Included:
6” round baking pan
10” parchment paper round
Sugar and Spice Mix - if making without kit you can substitute 1/4 cup brown sugar, 1/4 cup white sugar, 2 tsp cinnamon
Midtown Mix Mini Cake Mix (9.5oz) - alternatively, you can use half of a full size Cake Mix
Supplies & Equipment:
Small mixing bowl
Medium mixing bowl and whisk
Ingredients:
Cinnamon Crumb:
1/4 cup (half stick) unsalted butter, cold and cut into pieces
Cake:
1/4 cup (half stick) butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
1/4 cup sour cream or greek yogurt
1/4 cup milk
Preparation:
Preheat oven to 350°F with rack in middle. Press parchment paper into pan so that it comes up the sides of the pan.
Step 1:
To make up spiced crumb, empty spice mix into small bowl and mix until uniform. Add cold butter pieces and use a fork or clean hands to combine until crumbs are no larger than peas and all the dry ingredients are combined with the butter. Set aside.
Step 2:
For cake, combine melted butter, eggs, vanilla, sour cream and milk in a large mixing bowl and whisk until combined. Add Mini Cake Mix and stir until combined.
Step 3:
Transfer half the thick batter into prepared baking dish and press it to the edges to cover the bottom of the pan. It does not need to be perfectly even. Sprinkle about half of the spiced crumb mix on top, then add the remaining cake batter, it’s okay if it is uneven. Finally, sprinkle remaining cinnamon crumb mix evenly over the top of the cake.
Step 4:
Bake at 350°F for 40 minutes until a knife or toothpick come out clean. Let cake cool for at least 15 minutes before pulling out of pan
