6” Coffee Cake with Spiced Crumb
This recipe is for the Midtown Mix Mini Coffee Cake Kit. This can also be made using half of a full size Midtown Mix Cake Base One. Be sure to check out other recipes that use this base as well!
Moist and flavorful, with spiced crumb throughout, this cake is sure to please, especially paired with a coffee or tea.

6” round baking pan
6” parchment paper round
Sugar and Spice Mix - if making without kit you can substitute 1/4 cup brown sugar, 1/4 cup white sugar, 2 tsp cinnamon
Midtown Mix Mini Cake Mix (9.5oz) - alternatively, you can use half of a full size Cake Mix
Supplies & Equipment:
Small mixing bowl
Medium mixing bowl and whisk
Ingredients:
Cinnamon Crumb:
1/4 cup (half stick) unsalted butter, cold and cut into pieces
Cake:
1/4 cup (half stick) butter, melted and cooled
1 large egg
1 teaspoon vanilla extract
1/4 cup sour cream or greek yogurt
1/4 cup milk
Preparation:
Preheat oven to 350°F with rack in middle. Add parchment round to baking pan and grease sides of pan with butter or oil
Step 1:
To make up spiced crumb, empty Sugar and Spice Mix into a bowl and mix until uniform. Add cold butter pieces and use a fork or clean hands to combine until crumbs are no larger than peas and all the dry ingredients are combined with the butter. Set aside.
Work cold butter into the Sugar and Spice Mix until everything is incorporated and crumbles are no bigger than peas.
Step 2:
For cake, combine melted butter, eggs, vanilla, sour cream and milk in a large mixing bowl and whisk until combined. Add Mini Cake Mix and stir until combined.
Once all ingredients are combined, batter should be smooth and thick
Step 3:
Transfer half the thick batter into prepared baking dish and press it to the edges to cover the bottom of the pan. It does not need to be perfectly even. Sprinkle about half of the spiced crumb mix on top, then add the remaining cake batter. Finally, sprinkle remaining cinnamon crumb mix evenly over the top of the cake.
Layer batter and crumb in roughly equal proportions
Step 4:
Bake at 350°F for 40 minutes until a knife or toothpick come out clean. Let cake cool for at least 15 minutes before pulling out of pan
Cake is finished when evenly browned and a toothpick inserted in the center comes out clean. Also look for the sides of the cake to pull away from the pan.
Tips and Ideas:
Create a simple icing with milk, powdered sugar and vanilla to drizzle for an extra special touch
