Bittersweet Chocolate Almond Cake
Not too sweet, rich chocolate flavor pairs perfectly with dense almond flavor to make a sophisticated, but easy to make treat.

8 or 9” round pan or equivalent volume dish

Ingredients:
Cake
½ butter, melted (1 stick) or olive oil
3 tbs unsweetened cocoa powder
3 large eggs
1 (16 oz) Midtown Mix Almond Cake Mix
4 oz bittersweet / semi sweet chocolate chips, melted
Glaze
2 oz bittersweet / semi sweet chocolate chips
¼ cup heavy cream
2 tbs Toasted sliced almonds (optional)
Preparation:
Step 1 — Prep the Pan
Preheat oven to 350°F. Line the pan with parchment and grease the sides with oil or butter.
Step 2 — Mix Wet Ingredients
In a medium bowl, add melted butter, and cocoa powder and mix until smooth. Add eggs and mix until combined.
Step 3 — Mix the Batter
Add Midtown Mix Almond Cake Mix and combine. Add melted chocolate and combine.
Step 4 — Bake
Pour batter into the prepared pan and bake for 50 minutes, until the center is set and the cake is starting to pull away from the edges of the pan.
Step 5 — Cool
Cool in the pan for 10 minutes, then run a knife along the edges to release and move to wire rack to cook for at least 30 minutes.
Step 6 — Make Glaze
Once cake has cooled, add cream and remaining chocolate chips to microwave safe dish and microwave in 15 -30 second increments, stirring between each round. Once glaze looks grainy, stop microwaving and let mix rest for 30-60 seconds before mixing again until smooth. Let sit for 5 minutes before pouring on top of cake. Top with slivered almonds, if desired.
Tips & Serving Ideas:
Serve with a slightly sweetened whipped cream or a dollop of softened mascarpone, if desired.
Glaze can be made over a stovetop as well, just stir constantly and remove from heat before mixture is completely smooth.
For a super clean finish, pour glaze over cake while on the wire rack to let the glaze pour off. Alternatively, glaze the cake the plate and scoop the extra glaze onto individual slizes when it’s served.
