Mini Matcha Cake
This bright, flavorful matcha cake has all the punch of earthy matcha in a light cake.
Tools and Ingredients:

Medium mixing bowl and whisk
6” round baking pan (included in mini cake kit)
6” parchment paper round (included in mini cake kit)
Ingredients:
1 egg
1/3 cup of greek yogurt
2 tbsp melted butter
1/2 teaspoon vanilla extract (optional)
Preparation:
Preheat oven to 325°F.
Add parchment paper to bottom of 6” cake pan and grease sides of pan with a bit of oil.
Step 1:
Whisk together egg, Greek yogurt, melted butter and vanilla (if using).
Step 2:
Add Midtown Mix Mini Matcha Cake Mix and whisk until combined. Pour batter into prepared pan.
Step 3:
Bake for 40 minutes until edges are coming away from the sides of the pan, top is just starting to brown and center is set. Cool in pan for at least 15 minutes before running a knife along edge of pan to release. Turn out onto wire rack to cool. Serve as is or add tart cream (see tips and ideas).
Tips and Ideas:
To make a delightful tart and thick whipped cream, whip 2 tablespoons of creme fraische (or sour cream or full fat greek yogurt) with ½ cup of whipping cream and 1 tablespoon of sugar (powdered is best). Whip until soft peaks form. This cream is very stable and won’t separate like regular cream, so is great to make ahead if needed.
